A Little This a Little That

It’s been a week and a half since Averi’s transition from the crib and I have to say it’s gone very well. Let me follow that up with why. We made sure to do it when Shane would be home and that played a huge factor. When the girls are upset at night, me entering their room makes it worse, Shane walks in and they shut up. Monday he had to go back up to work. Bedtime wasn’t too bad but Averi did try to pull out all her tricks to avoid sleep and keep me coming in, luckily it was short lived.

She woke up crying at 1:30 in the morning just long enough to wake me. I lied awake and read for about two hours until finally drifting back to sleep only to have her wake up crying again at 4:00. She refused to nap this morning and spent an hour crying in her bedroom. I popped her on our bed with cartoons so I could shower and while I was doing so,  she took a hand full of her poop and painted our bed sheets and comforter with it.  This kid..sigh. I am not holding my breathe for a smooth bedtime tonight, but hopefully she will be too tired to fight me. I can hope.

This past Saturday we took the day to drive up to Julian. A little snow, some wine tasting and lunch. All the while I had Anthony Bourdain’s New Mexican Chili in the slow cooker.

There was snow and rain and ice and it was cold, I was not prepared. Having just been in Washington I thought I would be ok but that was a negative. I didn’t bring gloves or an umbrella and spent most of the time in damp clothes. The little town was busy and the weather was forcing everyone into all the restaurants and cafe’s. We finally found a place without a wait and we tucked into a corner booth for a mediocre lunch, but hey, at least we were dry.

Once we have seen all we wanted we wandered down the way to Wynola and popped into julian Station. It’s a neat building that houses tasting rooms, a taco bar, a few video games, a pool table and entertainment space for live music. Something almost out of the wild West. Definitely worth stopping at if you are in the area. We will be back.

Heading home we drove through Ramona and stopped at one of our favorite wineries, Chuparosa. We caught up with the wine maker who just got back from Walla Walla and then let the kids run free.

We had just enough time for one last stop. A winery none of us has been terribly fond of but it’s been years since we have tried their wine.  The tasting room was inside  a tin can, okay more like an airport hanger with paintings and statues of naked women dotting the property.

img_1034 The wine wasn’t as bad as we remembered however…we all ordered a wine flight of five wines, all red. They were all the same color, the Pinot was the same deep burgandy as the Zin. None of them had any real personality so we left empty handed. I think we all agreed we don’t need to go back.

The Bourdain chili recipe from his latest cookbook was really good, depths of flavors from roasted chili’s and beef. We enjoyed it with some red wine and a game with friends. Not a bad way to spend a Saturday.

Wrapping up the Holidays

To say I slacked on Christmas pictures this year is a bit of an understatement. I procrastinated taking our pictures and then slightly panicked when after I purchased them,I was told they may not make in time. On top of that, I somehow didn’t order nearly enough. So if you did not get a card from us this year, I apologize. You will next year.

We took some day time photos at Crystal Pier in Pacific beach. I think they turned out great.

On Kaili’s last day of school before break, her class had a Christmas performance.

It was the cutest thing and they sang some great traditional and non-traditional songs.

Once school was out I decided I probably should take them to Santa.

As you can see, Averi didn’t want to sit with Santa but other than that it was painless.

Our Christmas was nice, despite poor K bear getting sick most of Christmas day. She wanted nothing to do with her presents until later  when she started to feel better.  I hope everyone had a great holiday. Only a few days left on 2016 can you believe it? See you in the new year.

Thanksgiving and Homebound

We had a very nice and low key holiday. I don’t know why I say “low key” because there were 17 of us but since the kids were so entertained it felt, well calm.

The girls had so much fun with their cousins, it’s too bad we don’t live closer.

No one went hungry. We had Brie en croute and plenty of snacks,  ham, turkey, all the side dishes and a plethora of desserts which I couldn’t even manage to eat until late that night.

I didn’t take any food pictures which is very odd and I have no excuses.

We  woke up way too early the next morning to hit the road, home bound. We drove from 6:00 in the morning until 6:00 at night, went through five states and saw much of nothing but the girls did amazingly well considering. A good book doesn’t hurt either.

imageWe stopped for the night in Bishop, Ca. Luckily there was a Holiday Inn express with one room left that suited our needs. Once we were checked in we headed to a small Italian place for a decent pizza and then to bed so we could do it all over again But since we went so far the first day, the second day was much shorter. We pulled into San Diego by lunchtime.

Wine About It

We spent most of the day wandering from winery to winery. Downtown Walla Walla is basically one after the other, the only problem  is deciding which ones to skip. You could easily wine taste for days just downtown.

We started the trip with a list of wineries we haven’t been to so we could try some new wines.  Some were great, some too expensive and a few just amazing.

K Vitners, also known as Charles Smith has  very good wine, especially their Syrah’s.

We headed to the airport to try a few new ones and revisit an old favorite.

Of course we had to pop into Sleight of Hands since we are members.

And luckily two of the wineries we are always hoping to visit but are always closed were open.

Va Piano was a great experience. Not only did they have playmates for the girls,

we met the winemaker. He gave us a taste of his Rose out of the barrel and although it wont be ready for months is was already delicious, all of his wines were five star.

We got to visit the cellar and witness the aftermath of a wedding proposal.

Hard to follow that but we still tried. Dusted Valley had some above decent wines and a large lot for the girls to run around.

We have done some pretty good damage in the wine department.

On the Road Again

I pulled Kaili out of school a tad early so we could hit the road, destination Walla Walla.  The girls did good, better than I expected to be honest. After a pretty decent dinner in Stockton, we finished up the days drive in Dixon, a town outside of Sacramento. It was 8:30 p.m by the time we were all ready for bed and the girls crashed without a peep.

After a quick hotel breakfast we were back on the road again by 8:00 a.m. It was a long day in the car and the weather wasn’t great. We saw Mount Shasta and a few beautiful rainbows but besides that our sights were set on Newport, Oregon.

We hoped to get there while there was still daylight but by the time we checked in to our hotel and made it down to the bay front for dinner, it was pitch dark outside. Dinner was good, we have been wanting to try Mo’s for a long time, it was fun to check that box.

Too cold and dark to walk around, so we went back to the room to get the girls and myself in bed. I fell asleep before 8:00 p.m.

Kaili woke up around 6:00 a.m so we had an early start to the day. With cheese and ice cream on the mind, we made our way to the Tillamook factory. Kaili seemed to enjoy watching the cheese packaging process and pretending to milk the fake cow. Averi was just enjoying being out of the car and neither of them seemed to care about the cheese. We were disappointed to find out the cafe was only serving breakfast since we had our minds set on grilled cheese, so we settled for ice cream instead.

The only other stop we planned on before arriving in Walla Walla was Multnomah falls.  It was a perfect spot for a bathroom break and a stretch of the legs.

On the third day and the final stretch  of the trip, Averi decided to give into a nap. It was bliss.

We made our arrival into the town and conveniently drove by one of the wineries we are members of, so of course we had to stop.

It’s good to be here and it’s good not having to get back into the car for another day of driving tomorrow. Maybe wine tasting downtown instead.

 

Pumpkin Patching

We managed to visit three different pumpkin patches this year. I don’t think this is something anyone needs to do, but the kids had fun.

We took a day to check out the Ramona pumpkin patch. We also tried the famous cinnamon roll at the Ramona cafe…way overrated and then on to a few new wineries.

Averi had her first ever pony ride, you can tell from her face that it was exhilarating.

We painted pumpkins before school and then met Kaili for her Halloween parade.

After a mediocre dinner and a total meltdown from Averi, the girls were ready for some Trick or Treating.

Momma lasted about an hour and a half and then I was ready to get the girls to bed.

I think we successfully nailed October this year!

 

 

Cooking Cravings- Butter Lettuce + Blue Cheese + Cayenne Candied Walnuts

I wanted to love this salad, with that….I make a whole hell of a lot of salads like this, I pick a lettuce, add a fruit, a cheese and a candied nut. Sometimes I throw spices on the nuts but I never make them spicy spicy.

It lost me with the lettuce. Butter lettuce is just too delicate, especially paired with crispy apple and nuts. Maybe grapes would be a better choice? Or just stick with a spring mix blend of lettuce and herbs. The other thing that didn’t work for me was the vinaigrette. It was a tad bitter, it need a bit of sweetness so next time I will add some honey.

All said and done, this is a good salad but for me who makes them daily, not good enough. Although the walnuts can be eaten every damn day, so good!

Dressing Ingredients

3 tbsp extra-virgin olive oil
2 tbsp red wine vinegar
1/4 cup blue cheese crumbles
1 small shallot, finely chopped
1/4 tsp kosher salt
1/4 tsp freshly ground black pepper

Salad

1 large head of butter or Boston lettuce, separated into leaves, larger leaves torn
Apple, halved and cut into thin slices- I used Fuji
1/2 small red onion, sliced into thin rings
1/2 cup cayenne-candied walnuts

In a bowl, whisk together the olive oil, vinegar, blue cheese, shallot, salt, and pepper.

In a salad bowl, combine the lettuce, apple, and onion. Drizzle in the dressing to taste, toss lightly, and top with the cayenne-candied walnuts.

 

Cooking Cravings-Sweet Chili and Mustard Glazed Salmon

Sunday I took three recipes out of Chrissy Teigen’s cookbook Cravings to try this week. Usually  during the week I don’t actually “make” dinner. I figure out something easy for me and the picky girls. But this week, with Shane working from home I decided to meal plan. I thought it would be the perfect time to knock out a few of Chrissy’s healthier recipes. She has some really good looking dishes in there but those need to be saved for “special occasions” or otherwise known as Saturday’s.

Monday night I made the sweet chili and mustard glazed salmon. This is a really simple dish and cooks in no time. It was good, good enough to make again but not good enough to “put on rotation”.

Ingredients

4 skin on salmon fillets

Kosher salt and ground black pepper

2/3 Thai sweet chili sauce

2 TBS Sambal oelek

2 TBS large grain mustard

Position oven rack 4-6 inches from heating element and preheat the broiler.

Season the salmon all over with s and p. In a small bowl, stir together the sweet chili sauce, sambal and mustard.

Pour the mixture into a large cast iron skillet or oven proof pan. Set the skillet over med-high heat and heat until the mixture begins to simmer. Lay the salmon, skin side up, in that sauce. Cook until the salmon starts to turn pale pink on the outside, about 2 minutes, then move the skillet to the oven and broil until the skin crisps and the salmon is med-rare, about 3-4 minutes.

Remove the salmon from the oven and transfer the salmon to a plate. Return the skillet to the stove, add 1/4 cup water and cook over high heat, stirring and scraping, until the sauce thickens. Pour the sauce over the fish and serve immediately.

I served the fish with pesto zucchini noodles and tomatoes. I made the pesto and spiralized the zucchini earlier in the day. Then when time came, I blistered some cherry tomatoes over high heat, added the pesto just to heat it through and tossed in the noodles. Very easy and delicious.

 

Home is Where the Kids Are

Kaili was very excited to have mommy and daddy back home. She wouldn’t leave my side for a good two days. We were a bit jet lagged, the time change was only four hours but our  red eye flight, not getting a full nights sleep and bloody Mary’s first thing in the morning didn’t really help our cause.

Back to school sickness hit Kaili right before we got home and then it was passed to Averi who has an ugly cough. It took a few days for all of us to get back into the routine but I think we are all settled in pretty well.

Shane picked up Wags at the airport a few days after we got home. Kaili was eager to see his medals.

We spent the weekend being homebodies, enjoying the weather and each other.

She also loves this dress, today is the third straight day she has worn it. I may have let her wear it to school to avoid a fight. I need to wash it and tuck it away somewhere for a week or two.

It’s amazing how fast two weeks can go by.

We woke up Sunday morning and ate whatever was still in our fridge for breakfast. Thinking it was a good time for a second go at faceTime, we called the girls. Even though we were coming home in a few days Kaili still took it hard and it was a sad moment.

To shake the sadness, I  packed up the essentials and headed down to the pool, Shane soon followed.

After a few hours of relaxation and a slightly darker tan we slipped into the bar for lunch. Since it was Sunday most of the restaurants offered the national dish of Brazil, Feijoada on their menu. Shane wasn’t being a team player, he got the host to put on American football and ordered a hamburger…side eye… but he promised to help me a little with my order, since it’s meant to be shared. I jumped in head first to my delicious lunch and it was probably the best meal I had. Although, my mom can give them a run for their money.

After lunch we met  Cathy and Patti at their place, not far up the road for a car to drive us to Maracana stadium. Apparently the drive to opening ceremonies was a long haul due to traffic and closed roads, this time the driver to precautions and we went through the mountains and Favelas to get there, it worked out great. We had time for a snack and then we made our way to the stadium.

This was a sight to see and a pretty special place for me to walk into. The turnout of people was pretty spectacular.

The athletes came in and took their spots and then the show began.

The show started out strong but I have to say that after London, I am not sure anything can compare. Once the semantics were over, the party began. It was a concert for the Cariocas, which was awesome for them. They were having the best time. But for us Americans whom didn’t know any song or performer it became an old story after awhile.

The rain picked up and it was getting later by the minute so we decided to start our journey through some wild weather back to Barra.  Our driver Max was waiting for us where we left him, luckily. We had an interesting ride back, Max told us about how two men tried to carjack him while waiting for us. He was telling us the story in very broken english and google translate all while driving in the rain. He wanted to show us what he did so he leaned over Shane and opened the glove box and pulled out a knife. Apparently he threatened these men with it and scared them away but it was a interesting play of events, especially for Shane who was in the front seat and not sure what was going to happen. We laughed about it the rest of the night. We made it home just fine and I’m pretty sure the closing ceremonies were still going after we fell asleep.

If there was any day to sleep in, this was it. Our final day in Rio. Nothing really to do as the pool is closed on Monday’s and we had check out after lunch. We lounged around, grabbed some food and chocolate for the girls and then met Patti and Cathy at theirs for our ride to the airport. We were very lucky to have access to the Delta sky lounge this trip. Free food, drinks, wifi and a place to relax really can’t be beat.  The airport was swarming with media trying to catch interviews with athletes and even artists entertaining waiting passengers.

With that our trip home was a cinch. After a very good meal and some free wine I watched a couple of chick flicks and then reclined myself down for some sleep.

It’s really too bad the media made Rio out to be this terrible scary place because it was brilliant. I can really appreciate the hard hand that came down on Lochte because this city of Barra did not deserve that negative bullshit. The people were funny and went out of their way to take care of us, even with a language barrier. There was no harm in grabbing a taxi, and even alone I would have felt safe…(that is taking common sense precautions.)

That said there were a few things that I missed being out of the states. Their paper products leave much to the imagination as does their plumbing. There were zero signs posted outside of stores or restaurants so you have no clue if a place is open or when it’s closing. And their food, well let’s just say we have it really good here in the states. But after two weeks, it gets easy. The transportation, the shopping the language and ok not the food but most everything becomes easy and natural. I will miss it and I get why people love it there, it’s a pretty awesome place to visit.
