I think I bit off more than I can chew when I planted two Serrano plants, now I am choking on chili’s. If you live near me, please come by and grab a few or 10. Salsa and guac are the obvious way to use some of them up and I just happened to have 2 perfect heirloom tomatoes ready to be picked.
I used 4 chilis in this salsa and holy toledo it is spicy. But that’s the way, uh huh uh huh, I like it, uh huh uh huh…did you just sing that?
Tomato and Serrano Salsa
2 medium, ripe tomatoes
3-5 resh serrano chiles to taste
A large handful of cilantro, chopped
1 garlic clove, finely diced
1 small white onion, finely diced
1 1/2 teaspoons fresh lime juice
Salt or garlic salt, about 3/4 teaspoon
Core and dice tomatoes and put into a small bowl.
Cut the chiles in half lengthwise ( I would advise wearing gloves if you have small children you will be handling soon after) and scrape out the seeds (if you are a wuss) Chop the chiles as finely as you can, then add them to the tomatoes.
Add the chopped cilantro, diced garlic and diced onion. Taste and season with lime juice and salt. Cover and refrigerate for an hour or two.
