The Sono Talk

Today was my saline sonohysterogram. I was told to  show up at the office with a full bladder, and as I was sitting there waiting, wishing I hadn’t drank that last sip of water the past came rushing back. All the memories of sitting there waiting for blood tests, IUI’s, ultrasounds, more blood tests, more IUI’s. There were a lot of people in the office and a few women were leaving in tears. This is heavy stuff and I felt for those women whom just learned something negative, whatever it may be.

After a quick ultrasound the sono began the same way a pap-smear does. Then a thin flexible catheter is inserted through the opening of the cervix, so that the catheter lies within the endometrial cavity. A small amount of sterile saline is introduced into the endometrial cavity through the catheter. This saline distends the endometrial cavity, allowing better assessment of the contour and shape of the endometrium, checking for polyps and fibroids as well. He said all looked great and we were ready to proceed. The nurse gave me an antibiotic just to ward off any infection, better safe then sorry since they did enter foreign objects inside me. <–I don’t think that is correct DR. lingo but that is all I had. The worst part of this procedure is that all the saline that made it’s way inside, eventually finds its way out. Isn’t this romantic?

Now I wait for cycle day 1, that is when I will start on an estrogen patch for 84 hours. On day 3, I go into the office for another ultrasound to make sure everything still looks good. This being a frozen transfer, it’ s a new protocol then our fresh transfer, so I’m not sure what will come next. For now I wont stress about it. I have a vacation coming up which I intend to enjoy to the fullest.

Since Kaili is still a little sick I didn’t want to take her to school, and there was no way I was going to take her to the Dr. with me. Luckily her uncle Brian was available to watch her. Looks like they had a fun time.

Simple Roast Chicken

Ridiculously simple. I don’t even truss the bird, you can if you want.

2-3 lb chicken

1/4 cup softened butter

2 garlic cloves minced

Fresh herbs, thyme, rosemary, sage- whatev’s

Preheat oven to 450.

Rinse the chicken, then dry it very well with paper towels, inside and out. The less it steams, the drier the heat, the better.

Season the cavity of the chicken with salt and pepper.

Mix the garlic and herbs into the butter and slather the goodness all over and under the skin of the bird.

Season generously with salt.

Cook at 450 for 20 minutes then lower the temp to 400 and continue to cook for 45 minutes.

Let cool for 15 minutes before slicing.

See, simple.

Puppy Love

Kaili is still sick. She still has a fever, is terribly congested and has ugly cough. Saturday afternoon I bit the bullet and took her to urgent care just to ease my mind. I was worrying and haven’t been able to sleep through the night without checking on her a handful of times. Luckily it’s nothing major, just a bad cold and some laryngitis.

Do you know what makes any sick kid feel better? Puppies! We were pleasantly surprised when our next door neighbors got themselves a new addition.  Meet Roxy, you will be seeing a lot of her!

{Preschool} Letter C and Circle Activities

For my last week of September we worked on the letter C, I threw in the circle since… well it starts with C.

If you really start thinking about all the things that start with the letter C it will blow your mind, so I advise against it.  Here are some tray, table and art activities for your preschooler.

Chicka Chicka Boom Boom magnet activity. I cut out the tree and taped it onto a magnet board. After reading the book at circle, I invited the children to read the book themselves, putt the letters on the coconut tree as they followed along in the book.

Circle Printing– Provide different circles for the children to print with. I really wish I had incorporated a few wine corks for this activity. Cork, circle, double C’s….damn it! I’ll have to do it with Kaili.

The One About The Sick Kid

We had a nice healthy run but it’s come to an end. Tuesday Kaili developed a low grade fever and some mediocre whining, nothing else. Wednesday night was rough, she woke up every few hours and at 2:00 A.M. she was burning up. I took her temperature 3 times and it averaged to a 102 degree fever. I gave her some Advil and went back to bed trying not to worry. I laid there until the sun came up, checking on her every so often.

Kaili was yelling “mommy, I wake up” by 6:00, this was going to be a long day. Thankfully, I already had the day off and Shane would be home soon.

Her Advil wore off and her fever came back along with hoarseness and a cough. She is in a decent mood considering  and she goes  through some sever whining fits but fingers crossed this is the worst of it!?!?

Tomorrow, is my last scheduled day of work for now. I really enjoy working but I also miss having some free days. The grass is always greener I guess.

Pizza and Pumpkins

Friday evening Kaili was invited over to a friends house to pick a pumpkin. My friend has a serious green thumb and I feel like a bad human being when I go to her house because her backyard is like a little farm and I can’t even grow tomatoes in a container.

Saturday I found myself with leftover blue cheese and Pears from our Farm Fresh delivery. I knew that I wanted to put them on a pizza with some arugula because I heart arugula . Sprouts didn’t have any pre-made pizza dough, are they done with that? So I was forced to make my own. I used this Martha Stewart recipe that only required an hour rise time, perfect.

Preheat oven to 450.

Once the dough was rolled out i brushed garlic + olive oil onto the dough and baked it for a few minutes. Then I threw on some mozzarella, crumbled blue cheese, roasted pears and red onions and baked for 10 minutes, toss on some arugula and return to oven for a few more minutes.

I would actually recommend using gorgonzola instead of blue. The cheese was so strong that it overpowered the other flavors.

Sundays are spent in front of the T.V. and  it looks like Seattle is going to make it worth our wild this year.

So in honor of our winning season I made some football food. Wings and pizza, can’t go wrong with either of those choices.

I made about 20 wings. Started off seasoning them with garlic salt, cumin, cayenne and ground black pepper.

I baked them at 400 degrees for 50 minutes, then I hit them with the broiler for a few extra minutes to crispy up the skin.

I melted 1 Tbs. butter and 1/2 cup Franks extra hot sauce in a sauce pan over low heat until warmed through. Then you toss the wings with the sauce and voila! Baked chicken wings.

Easy breezy, and tasty too!

Brigadeiro Recipe With Healthy Stuff Thrown In

I woke up this morning and it dawned on me that we should have gotten our Farm Fresh To You delivery, it was like Christmas morning, well if  I were a vegan.

I signed us up for the farm delivery last week and have been anticipating our box of goodies.

I was impressed with what we got. The same items I would choose to buy at Sprouts, all organic and delivered to my doorstep while I sleep. I see nothing wrong here. The other nice thing is that our delivery day is Wednesday so it’s perfect for my weekend meals.

Now that we got all the healthy stuff out of the way, let’s talk about candy.  Brigadeiro ” { Portuguese for Brigadier; also known in some southern Brazilian states as negrinho, literally “blackie”} is a popular candy served at birthday parties in Brazil. Since my mom spent some of her youth in Brazil she made these for me throughout my childhood. Actually now that I think about it  she probably made them for herself but knew I would like them.

Who better to turn to when you need a recipe then your mom right? Well unless your mom can’t cook.

These are like balls of delicious chocolate caramels and SO easy to make! This is my mom’s recipe from Brazil, the only substitution is Cocoa powder for Nestle chocolate powder.

3 Tbsp butter
3 Tbsp Cocoa powder
2 Tbsp Karo syrup
1 can sweetened condensed milk
1/3 tsp salt

Cook in small pan until mixture rolls off bottom { about 10 minutes}

Pour onto buttered plate until cool enough to handle.

Roll into small balls and dip in sugar.  Store in airtight container in cool place.

Bahia-Style Shrimp in Coconut Sauce

Remember when I used to cook? Like really cook, every night? Ya, me too. Now I slack off and make something simple for myself during the week, it usually involves a rotisserie chicken and lettuce or something to throw on the grill. K will get a super gourmet meal of pasta or quesadillas.

I do get a chance to make a few real meals on the weekends when Shane is home. To get motivated I need the extra hands to keep K busy and the extra mouth to help eat it.

That is why our dinner theme parties are so fun. It gives me a chance to make a dish or two that I probably wouldn’t make on a day that ends in Y.

This months theme was South American cuisine and I went with Brazil. I made a popular candy that they eat called Brigadeiros {recipe to come} and some shrimp in a coconut sauce. This dish was pretty easy and I will make it again, it was muito bom!

I followed the recipe exact but before adding the shrimp I decided the sauce was a little bland. I added more coconut milk, the rest of the tomato sauce  and a tad more salt. I was impressed with the heat the habanero let off, but I would throw in 2 next time.

Bahia-Style Shrimp in Coconut Sauce

Recipe from Food and Wine

2 pounds large shrimp, shelled and deveined, tails left on { I took them off}

3 garlic cloves, minced

Juice of 1 lime

Kosher salt to taste

2 tablespoons  corn oil { I used EEVO }

1 small onion, minced

6 scallions, white and light green parts, minced

1/2 medium red bell pepper, mince

1/2 medium green bell pepper, minced

6 plum tomatoes, minced

1/4 cup tomato sauce

1/2 cup unsweetened coconut milk

1 Scotch bonnet or habanero chile, halved and seeded

1 tablespoon minced cilantro leaves and stems

Lime wedges, for serving

In a large bowl, toss the shrimp with the garlic, lime juice and 1 teaspoon of salt. Let marinate at room temperature for 30 minutes.

In a large skillet, heat the Annatto Oil until shimmering. Add the onion, scallions and red and green bell peppers and cook over moderately high heat, stirring, until softened, about 4 minutes. Add the minced tomatoes and cook until softened, about 5 minutes. Reduce the heat to moderately low and add the tomato sauce, coconut milk, chile and 1 teaspoon of salt. Simmer until the sauce is reduced by one-fourth, about 10 minutes. Increase the heat to moderately high. Add the shrimp and cook, stirring, until they’re pink and opaque, about 5 minutes. Transfer to a serving dish and discard the chile. Sprinkle with the cilantro and serve with lime wedges.

Serve with white rice.

K’s First Haircut

I wish I had some dramatic story to tell you, something about the way she flipped out on the the hair stylist and kicked and screamed through the entire thing. Ha ha, no I don’t, but that is the way I saw this going  in my head, which is why I kept putting it off, but she proved me wrong.

To make it a special occasion I got her a milkshake before we hit the hair place. I thought that she would be so entranced in the deliciousness that she wouldn’t mind sitting still for a few minutes. But she didn’t even want the shake until we were in the car on the way home.

What can I say? She did great and had the entire salon gushing over her. Proud to be her mommy.
