Alphabet Board

I spent my Tuesday making an alphabet board for K. I saw these self adhesive poster letters at Target and thought hmm, these might work nicely. Lies, they don’t stick so I had to glue them on. When I was all done I went to read the alphabet to Kaili, ABCDE….f*ck, I forgot the f*ck*ng F! And yes, I had already glued them onto the poster board. So I threw a mini temper tantrum and opened some wine. I started over the next morning, remembering the F this time.

Then I went ahead and made flash cards to go with them.

Kaili has become a bit demanding lately. She insisted on coloring for the majority of the day, but if I stopped moving the crayon for one second she reprimanded me. Clothes were optional, hers not mine.

Pulled Pork and Aged Cheddar Baked Flautas

If you are a Costco fan then you know the latest coupons have a deal on pork loin, we picked a couple up for lazy day cooking AKA slow cooker days. I made Kalua pork  on Saturday but the meat was too lean and the outcome was flavorful but dry. Now I had a load of dry pulled pork that no one wanted to eat so I got creative. I went through the fridge to see what I could come up with. Success is what I had, pulled pork is no longer only for sandwiches.

Ingredients

2 cups of shredded pork

1/2 red onion, diced

2 garlic cloves, minced

2 Tbs diced green chills

1/4 tsp garlic powder

1/4 tsp chili powder

1 cup shredded aged cheddar cheese.

Sea salt and freshly cracked pepper, to taste

Whole Wheat Flour Tortillas

Cooking spray

Preheat oven 400 degrees.

Saute onion and garlic in a little olive oil until translucent.

Add chilis, pork and spices, stir until heated through.

Cut tortillas in half. Add a little pork mixture, top with cheese and roll up flautas. Place on greased/foil lined baking sheet and repeat until all the mixture is gone. This made about 10 flautas.

Spray the flautas with cooking spray and bake for 20 minutes or until brown and crispy. Serve with guac, sour cream and a favorite hot sauce.

We now have an Arizona native living with us. Our good friends daughter has left the nest and come out to try life in sunny San Diego. She will be helping me with K and hopefully working to pay for the gas she plans on putting in this car.

Yep, this b*tch got herself a BMW for her first car. This was my dream car in high school, it’s the car Kelly drove on 90210, it was the epitome of awesomeness in the 90’s.

I wanted to introduce you to Kiah as now she will probably be appearing in my blog posts and pictures. I didn’t want you to be all “who is this chick who is always at their house.”  So now you know. I think it’s going to be a culture shock for her, living with an almost 2 year old isn’t glamorous as she has already learned not to leave a hot straightener on the floor where little hands can get to it. K has two little blisters on her fingers now.

I hope she meets some great friends and loves living out here, I mean who wouldn’t? It’s been in the mid 70s this past week and we are six miles from the beach, zoo, SeaWorld and all that good stuff. She has the world at her fingertips, I am a little envious.

Sautéed Brussel Sprouts With Bacon

Somewhere in my youth I decided I didn’t like brussel sprouts. My mom tells me that I liked them as a young child, I believe there is proof in a photo circa 1979. I don’t know what happened but I have turned my nose up at them for years, until recently. Maybe my taste buds changed or maybe I wasn’t having them prepared at their finest but I can’t get enough of them now. Just ask Shane, I am pretty sure is really tired of roasted brussel sprouts. So being the amazing wife that I am, I decided to try cooking them a  different way, with bacon. If you don’t like bacon then you don’t like life, and you may as well stop reading because you are a unhappy soul.

Recipe adapted from Food Network

Ingredients

3 slices bacon, chopped

1 tablespoon extra-virgin olive oil or butter

2 garlic cloves, minced

1 1/2 pounds Brussels sprouts, cored and shredded

Salt and pepper, to taste

Place bacon in a large, deep skillet. Cook over medium-high heat until crisp. Drain, reserving 2 tablespoons grease, crumble and set aside.

In the same skillet, add olive oil or butter in with reserved bacon grease over medium heat. Add garlic and cook, stirring until translucent. Add Brussels sprouts to the pan, and season with  salt and pepper. Cook over medium heat until sprouts are wilted and tender, 10 to 15 minutes. Stir in crumbled bacon just before serving.

Crustless Leek Quiche

I wanted to make something different for breakfast and I thought a crustless quiche was a good bet. It looked easy and I made it ahead of time so it was ready and waiting for us the next morning. Almost like having a personal chef but not.

I introduced Kaili to tray tasking while I cooked. I gave her tongs to experiment with. I had no expectation of her mastering this but she got the hang of it pretty fast. After awhile she gave up the tongs and just used her hands, smart girl.

Crustless Leek Quiche

Ingredients

1 large leek, chopped, 4 ounces after trimming
1 tablespoon butter or olive oil
3 eggs
1/2 cup cream
1/4 teaspoon salt
1/4 teaspoon pepper
6 ounces Gruyere or Swiss Cheese, shredded

Clean the leeks well to remove any sand. Slice thinly and sauté in butter or oil until tender. Beat the eggs, cream, salt and pepper in a small bowl. Put about 3/4 of the cheese in a greased pie plate or quiche pan. Evenly spread the leeks over the cheese. Pour in the egg mixture; top with the remaining cheese. Bake at 350º for 30-35 minutes, until golden brown on top. Let stand a few minutes before slicing.

Sick, Tired and Cold

It has been so cold here, too cold. On top of that Kaili came down with a cold. One minute she was fine and then BAM she was snotty, congested and had a fever. I can feel the ick try to take over me, I really hope I can stay healthy.

Sunday football was something else huh? And how about the Golden Globes, did you watch? Since Homeland swept the awards, you need to jump on the bandwagon if you haven’t yet. I was also happy to see Girls get the win, season 2 just started back up on Sunday, watch it!

Call me a wimp but I just can’t get outside in this frigid weather. It was 34 degrees this morning, that means shoes, socks, layers and layers and I didn’t sign up for that shit. So instead of outdoor fun I have been trying my best to pull off indoor activities for K, some have been a hit and some not so much. It really depends on her mood and with this cold sometimes her mood isn’t always charming. I thought I would share a few ideas in case you find yourself with a sick toddler on a cold day.

1. Sensory Shaving Cream Activity- Squirt shaving cream onto table, high chair or cookie sheet. Add food coloring, glitter, or glue for puffy paint.

2. Mess Free Finger Painting.

3. Stringing Cheerios- Give them cheerios and a pipe cleaner and demonstrate how to “string”.

4. Fill Balloons with Play dough for sensory fun.

5. Discovery Bottles.

6. Glue velcro onto craft sticks- Let them stick and unstick to their hearts content.

7. Frost a cookie- Give them a cookie or a graham cracker and let them spread on a yummy topping.

8. Ice Cube Painting-Fill as many slots in the ice cube trays as you want halfway with paint and fill it the rest of the way up with water. Stir the paint and water mixture with the popsicle sticks and place one popsicle stick in each mixture. Place the tray in the freezer until each mixture is frozen completely. Pop put the ice cubes and let the kids paint with them on paper.

9. Pudding Art- Vanilla Pudding + food coloring make delicious edible finger paint.

Birthday Cookies

After Shane, my dad is the hardest person to shop for. What do you get a man that has everything? Well, this year, he gets cookies. Chewy ginger cookies to be exact, these have ground ginger, fresh ginger and carmalized ginger in them, it’s a triple ginger delight.

If you were to ask me if I would like a cookie, I will only oblige it its peanut butter, chocolate chip, Oreo or maaayyybe an oatmeal, other than that, no thank you. But every time I have a ginger cookie, I am all’ hmmph that’s pretty good” However I never think I like them, it’s like my memory erases after I eat it…anyhow I made my dad these cookies and people, they are GOOD. I think I can now say I do like ginger cookies and I hope my memory doesn’t escape me of this deliciousness.

CHEWY GINGER COOKIES

Ingredients

2 1/4 cups all-purpose flour

2 1/2 teaspoons ground ginger

1 1/2 teaspoons baking soda

1/2 teaspoon ground cinnamon

1/2 teaspoon freshly ground nutmeg

1/2 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

3/4 cup packed dark brown sugar

1 cup butter- room temperature

1 large egg

1/2 cup robust molasses

1/2 teaspoons finely grated peeled ginger

1 teaspoon vanilla extract

1/2 cup finely chopped crystallized ginger

1 cup raw sugar

Directions

Preheat to 350°. Line 2 baking sheets with parchment paper or baking sheets.

Whisk flour, ground ginger, baking soda, cinnamon, nutmeg, salt, and pepper in a medium bowl. Using an electric mixer on medium-high speed, beat brown sugar and butter in a large bowl, scraping down sides halfway through beating, until light and fluffy, about 3 minutes. Reduce mixer speed to low. Add egg, molasses, grated ginger, and vanilla; beat just to blend. Add flour mixture; beat on low speed just to blend. Mix in crystallized ginger (dough will be very soft and sticky).

Place raw sugar in a shallow bowl. Using a tablespoon measure, scoop out dough. Using a second spoon, scoop dough from tablespoon measure into bowl with raw sugar; turn to coat well. Roll into ball. Transfer to prepared baking sheet. Bake cookies, rotating sheets halfway through, until edges are firm and centers appear cracked, 10–12 minutes. Transfer cookies to wire racks and let cool.

Speaking about Growth….

Yesterday Kaili and I headed over to Rady Children’s hospital for her speech/language evaluation. What did I learn? Not much more that we already know. Kaili was given a diagnosis of expressive language delay secondary to unknown etiology.  The therapist didn’t think her speech delay has anything to do with her difficult birth given how incredibly smart she is in all other areas. She was truly impressed with Kaili’s cognitive skills and the way she follows directions. It really was neat to sit back and watch Kaili interact with a stranger, carefully listening and following directions. It makes this whole situation a little sweeter. The therapist was impressed with how well she can communicate nov-verbally, although I do regret not teaching her sign-language, but the past is the past and we can only move forward.

Now what? It is recommended that Kaili see an individual speech therapist twice a week for 6 months, progress at that time will determined. Sometimes I think Kaili has the ability to talk but is timid about trying. Shane and I both think it will all click one day but for now we will seek help. Nothing harder than trying to help a frustrated child, that is why early intervention is always best. I have had countless people tell me “why do you want her to talk? Once she starts you are going to wish she never started”. I can tell you that I am really tired of hearing that, and I promise I will never say that.

Today we went back to the Dr. for her growth check. In November her weight and height had plateaued. I was almost positive it was because she had gotten a bad cold back in October and really wiped out her appetite. Two months later she has gained a pound and her height has jumped up quite a bit. I mean she is still itty bitty but the Dr. was happy to see things moving in the right direction.

Operation “fatten up baby” success! Now we wait to hear back about her speech therapy.

We finally made it out of Walla Walla and back to San Diego, obviously. The flights were fine, Kaili was antsy but all in all it wasn’t too bad. When we landed in Seattle  we had just enough time for a quick diaper change and then we walked straight on to our next flight.

Kaili crashed once we got home, Shane and Wags watched football and I went to the store to pick up all our NYE wine party necessities. Our Washington wine shipment didn’t come in time for our party so I ended up having to pick up wine from BevMo, lame!

Kaili took her doll on a walk, had dinner and was in bed by 6:20. We didn’t hear from her again until 7:00 am the next morning. Happy New Year!
